ABOUT US

Laney Cakes was the Nickname given to me by my Culinary School  Classmate Justine back in 2008. I've been Laney(lay-nee) ever since.

It started when I was eight years old. I remember nagging my mother for a muffin tin. Her and I would always watch cooking Shows on PBS. Julia Child, Martin Yan, Jacques Pepin. Well she bought me my first muffin tin. We always had Kellogg's Cornflakes at our house when I was a kid. So I  made my first batch of oatmeal and cornflake muffins. None of that fancy stuff at the time. That came years later.

Fast forward to High School, I was the one baking the cookies, brownies, cakes, and pies for the pep rally's every week during football season. Go Lancers!! C/O 96!

I would indulge my classmates with NY Cheesecake, Brownies, and Birthday cakes with shiny sprinkles.

I spent twelve years in Retail Management until I finally decided to go to Culinary School. Baking and Cooking on my free time from retail, watching the Food Network (it was fairly new at the time) it gave me the motivation to pursue something that I was passionate about and made me happy. Thus, Le Cordon Bleu happened! Did my training and internships at a couple of restaurants and bakeries for experience.

Two Years Later I was a Pastry line cook in West Hollywood working for one of my heroes Rick Bayless. Two Years later I helped open Figoly at The Luxe City Center in Downtown Los Angeles with Top Chef Alum Alex Reznik as a Pastry Chef. In 2014 I was the Executive Pastry Chef at Colette's Catering in Fullerton, Ca. My clients consisted of JP Morgan, Kimberly Clark, Cal State Fullerton, Fender Guitars, and many weddings, and countless events. 2016 and I'm in San Juan Capistrano as the Executive Pastry Chef at Sundried Tomato and Bistro producing desserts for two restaurants and their catering company. Long hours and recipe development gave me an epiphany! I can totally do this on m y own! I'm ready!!
